EUROCAROTEN PRODUCES THE MOST CITED ARTICLE IN THE TOP NUTRITION AND DIETETIC JOURNAL

The article reviews the importance of carotenoids in agro-food and health and outlines research needs. Carotenoids are very versatile compounds involved in key actions in Nature. Their presence in foods is important not only for their role in food acceptability as colorants but also because some of them are precursors of vitamin A. Evidence has accumulated that their presence in the diet at adequate levels is associated to a lower risk of developing diverse diseases (cancer, cardiovascular disease, eye and skin conditions, metabolic disorders, etc.). Being essential in photosynthesis and precursors of plant hormones and signals further research on them will be key to tackle the global challenge of producing health-promoting sustainable foods.

 

The paper has been published in Progress in Lipid Research, the top ranked journal in the Nutrition and Dietetic field and has already received nearly 200 citations in three years
