This issue will cover a wide range of research areas concerning natural colorants. Research or review articles are welcomed, including (but not limited to) identification of novel natural colorants, advances in sample treatment, improvements in analytical methods for quantitative and quality control purposes, new trends in colorants purification, stability studies, theoretical and experimental studies on the (bio)chemical properties of natural colorants, and potential industrial applications of new natural colorants.
