I lead a team that works on carotenoid bioavailability. We are interested in several factors that modulate carotenoid bioaccessibility, carotenoid absorption, carotenoid metabolism, carotenoid transport and carotenoid distribution in various tissues. The factors studied are very various, starting by the effect of the food matrix in which the carotenoid are absorbed to the effect of genetic variations of the individual on their ability to absorb and convert provitamin A carotenoids to vitamin A. We use several models from an in vitro digestion model to clinical studies through studies in trangenic mice.
