My scientific research includes: extraction methods for isolation of bioactive compounds in natural products (fruit and vegetable extracts); identification and quantification of valuable molecules (e.g. polyphenols, carotenoids, betalains, vitamins etc.) by spectrophotometrical and chromatographic methods (HPLC); evaluation of antioxidant activity of natural products by spectrophotometrical assays; encapsulation of bioactive compounds by freeze-drying method; evaluation of biological activity of natural products; investigation of extracts influence on reactive oxygen species using electron spin resonance spectrometry (ESR).
